🧂 Essential Dry Rub Recipes
1. All-Purpose BBQ Rub
The perfect starting point — works on everything from ribs to chicken to vegetables.
- 3 tbsp brown sugar
- 2 tbsp smoked paprika
- 1 tbsp kosher salt
- 1 tbsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- ½ tsp cayenne pepper
Mix well and store in an airtight jar for up to 3 months. Apply generously to meat at least 1 hour before cooking (or overnight for deeper flavor).
2. Texas Brisket Rub
In Texas, less is more. This simple rub lets the beef and smoke do the talking.
- 4 tbsp coarse black pepper (freshly cracked)
- 2 tbsp kosher salt
- 1 tsp garlic powder
- 1 tsp smoked paprika
Apply heavily to all sides of the brisket. The coarse pepper creates an incredible bark after a long smoke.
3. Memphis Rib Rub
Memphis BBQ is all about the rub — ribs are often served "dry" with no sauce at all.
- 3 tbsp paprika
- 2 tbsp brown sugar
- 1 tbsp kosher salt
- 1 tbsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp celery salt
- ½ tsp cayenne
🍫 The Art of a Great BBQ Sauce
BBQ sauce is applied at the end of cooking — never during a long smoke, as the sugar will burn. Brush on in the last 15–20 minutes of cooking, or serve on the side. Here are the four great regional styles:
1. Kansas City Style (Sweet & Smoky)
The most popular BBQ sauce style in America — thick, sweet, and deeply smoky.
- 1 cup ketchup
- ½ cup apple cider vinegar
- ½ cup brown sugar
- 2 tbsp Worcestershire sauce
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp black pepper
- ½ tsp cayenne
- 1 tbsp molasses
Combine all ingredients in a saucepan, bring to a simmer, and cook for 20–25 minutes until thickened. Store in the fridge for up to 2 weeks.
2. Carolina Vinegar Sauce (Tangy & Thin)
Eastern North Carolina style — thin, tangy, and perfect for pulled pork. No ketchup, no sugar — just pure vinegar punch.
- 1 cup apple cider vinegar
- 1 cup white vinegar
- 1 tbsp red pepper flakes
- 1 tbsp black pepper
- 1 tsp salt
- 1 tsp sugar
Mix all ingredients and let sit for at least 1 hour before using. No cooking required. Keeps for months in the fridge.
3. Alabama White Sauce
A mayonnaise-based sauce unique to northern Alabama — creamy, tangy, and incredible on smoked chicken.
- 1 cup mayonnaise
- ¼ cup apple cider vinegar
- 1 tbsp horseradish
- 1 tsp black pepper
- 1 tsp garlic powder
- ½ tsp cayenne
- Salt to taste
Whisk together and refrigerate for at least 30 minutes before serving. Use as a dipping sauce or brush on chicken in the last 5 minutes of cooking.
4. Texas Mop Sauce
A thin, savory basting sauce used during long smokes to keep meat moist and add flavor layers.
- 1 cup beef broth
- ½ cup apple cider vinegar
- ¼ cup Worcestershire sauce
- 2 tbsp butter
- 1 tbsp your favorite rub
- 1 tsp hot sauce
Combine in a saucepan and warm over low heat. Apply with a mop or brush every hour during a long smoke.
